Looking at some Dinosaur's profiles, I have noticed that old Locationless caches are included in some stats (ie top Region finders for the US) while they are not included in their own Profile Maps

This is correct. We normally don't exclude any data, but rather use it as is. The data is what it is, it's not up to Project-GC to judge and go through that data.

If you don't want the locationless caches to be included, you can add a filter yourself to select all cache types except that one. This is what we call dynamic statistics, the users of the site can tweak the statistics in many many ways, to get the result they are looking for. They just need to understand the data.

Profile stats has an optional exception. By default we exclude all geocaches listed in a bookmark list maintained by Moun10bike at Geocaching HQ. The exclusion can be turned off by the specific person.

That is not a bug bug a feature
The choose if locationless and ocher cacher on the ignore list in included in your stats is up to the cacher.
And the region finder stats uses the same for all for consistency.
A ignore options might be an idea on that stat bur i suspect it is to expensive.

That is selected in setting at your profile page
