Can you clarify what you need?

You can bookmark any cache in your browser, on geocaching.com, you can create a bookmark list with caches that you might qualify in future (requires premium on GC) or you can use Virtual GPS in Project-GC (requires paid membership on PGC). There are many possibilities how to achieve it.

I have several challenges that I am short on qualifying for by 1 or 2 caches. I would like to know if I can bookmark them in ProjectGC so I can go to my profile and can easily update them without doing them individually. I know I can bookmark them  in geocaching or in GSAK, but it would require individual updates

Either geocahing bookmark or VGPS on Project-GC can be shown in the map and if you are paying member, you will also see the "tick" or "cross" indicating you fulfil or not the challenge. See more information on Membership page under "Auto-challenge-checkers":
