For the first question you can use Map Compare. You don't need to indicate anybody to compare with. Don't forget to select under "Show disabled/archived" disabled, unless you want to see only active caches.

E.g. for the province of Santa Cruz de Tenerife (inspired by your nickname), this looks like this:

As regards the second question an easy, optical method is to look at the map in your statistics section and select either "counties" directly under the header with the country name or, if you want to get a bigger map of the counties of one region only, you select the region in question.

In your case you would find this here: https://project-gc.com/Statistics/ProfileStats?profile_name=Team+Canary&getprofile=Get+profile#Maps, but you have to click on the appropriate button as outlined above.

Under the map only counties where you have found caches in are listed, so you'd have to determine the names of the missing counties with any geographical database. Usually Wikipedia contains all the information you need.

You can use https://project-gc.com/Tools/MapCounties to figure out which countries you have logged and which you haven't. If you then click a county you haven't logged and then click the name of the county in the popup that appears, it will show you all the caches in that county.

Be aware, though, that this is accessible only for paying members :-).
I have an on-topic follow up:  when i select the county, the polygon map appears. I can zoom in and out, but no caches (found or unfound) appear. I am a paying member and logged in. Have you seen the same?
If you click a county on that map, you should get a popup with the name of the county. If you click that name, you should get another map with all the caches in that county.
Yup yup yup! I see what you mean: click the polygon of the count and click on the county in the pop up. Bam! There they are! Seems simple but I did everything...but that. :) thanks again!
Thanks!  I was having the same issue.  I'm so glad I was able to find your response.  I wish Project GC would post instructions (or am I missing something).  I think there are many benefits I'm missing just because I don't know how to use the website.
