You always need to allow 24-36 hours for new logs to be processed, to finds from this weekend can't be expected to be included yet. Also note that this is the time needed for the finds to be in the Project-GC database. After this, your Profile Stats page needs to be regenerated for the finds to be visible there. This happens once daily if you are a paying member of Project-GC and weekly otherwise. (For other pages of Project-GC, like top lists and tools, the database is used directly.)
As for the date, when the Profile Stats page is regenerated, the current state of the database is used. This means that it's perfectly possible for the page to have today's date on it but your finds made today not be included. The date only tells you when the page was created.
Project-GC updates finds per cache, not per cacher. This means that not all your finds will be processed at the same time, so it's also possible that some of your finds for a certain day but not others will be included after an update.
