Some years ago I visited an event in Westfjords/Iceland (N 65° 08.711 W 021° 05.045), but I have not found any other caches in that region. At first the region showed up as found on the map, but not anymore. So therefore my question: Is hosting and/or visiting an event in a country/region sufficient for that country/region to "count" as visited?

Yes, an event counts as a log in the country the event is hosted in.

Thanks very much for your quick reply. Does it also count for regions? And what could explain what I experienced in Iceland?
Also, a friend of mine hosted an event at the exact same coordinates two years earlier, did not visit any other cache/event in the region same as us and his map shows Westfjords as found. I cannot explain it.

Both events are listed as in "Iceland / Northwestern Region / Húnaþing vestra", not Westfjords. It's been a couple of years since the event was held, so it's quite possible that the map data for Iceland has been updated to a more correct set, and that the event was originally mislocated to Westfjords.

It's also possible that some portion of land has actually been officially transfered from one region to another. (A cache will always count for the region it's currently in, not what it was in when it was logged, just as the current D/T and all other stats is what counts.)

Looking at Project-GC's current maps, the event location is over 30 km from Westfjords.
